Blueberry & lemon scones {simple mornings}

I am at a place in my life where I like simple. Meals. Entertainment. Family time. Our schedule gets a little full once school is in session, and I just want to have time to be still and watch my teens interact with one another in a meaningful way. Kinda hard to do that when I am running around like a headless chicken; fixing meals, running carpool and.... you get it. Always something to DO.  

So, when I find a recipe that is EASY, yummy and simple, I kind of go a little OCD. Ladies, I made this recipe 3 times this week! They were gone quickly and enjoyed by the whole tribe.

What drew me to this recipe was the lemon glaze. {I didn't use a double boiler like Tyler recommends; I mixed the lemon zest, lemon juice and powdered sugar until smooth and lathered the scones when cool.}  My sweet Hubs has a deep love of all things tart and tangy. These blueberry scones hit the spot.  

Scones used to scare me. I thought they were difficult to make and rock hard. I was happily mistaken; these scones are flaky and moist and the burst of blueberries is fantastic. I learned something new this week, and that's always a good thing. Especially when I feel like I am losing more of my mind than I ought :) 

Go make a batch and pass on some bakery-love. I shared some scones with my sister and neighbors and now they will share in my affinity of scones {sorry, guys!} Yep, it's a keeper. Simplicity at it's best: great tasting food the entire family enjoys! Makes for a happy Mama.
